Cream Cheese Coffee Cake ~ #TheCakeSliceBakers

Life is too short not to eat cake for breakfast.



 The Cake Slice Bakers continue their baking journey through The Perfect Cake from America's Test Kitchen.  Each recipe has been fine-tuned to perfection and there are tips and tricks to guide you through the making of each cake. The perfect coffee cake is a combination of a moist butter cake and a streusel topping.  There are many variations for this amazing cake, but this recipe has lemon-flavored cake, a cream cheese center, and a sugar-lemon-almond topping. It is baked in a tube pan, which ensures that the cake is baked all the way through and you are not at risk of the cake being gooey in the center and dry on the edges.




As it is baked in a tube pan you need to make sure that you spray it thoroughly with baking spray so that you can remove it easily after baking, and make sure you let the cake cool completely before attempting removal.  I also find it easier to use a tube pan that has a loose base, which allows the cake be to removed without having the turn it upside down. Of course you still have the center piece and bottom to deal with, and I usually run a small paring knife around the center tube to release the cake, and then I slide two spatulas under either side of the cake, moving them to release the cake from the bottom, and then gently lift it onto a serving plate.




This cake has a delicate lemon taste and the streusel topping is the perfect compliment., especially with the crunch from the almonds.  I liked the cream cheese filling, but I did think that there was a little bit too much - or maybe I was a little too gentle when swirling it, so it wasn't distributed evenly.  It did make a very nice accompaniment to my cup of coffee.  I think I know what breakfast will be in the morning.

  3. What a beautiful cake! It sounds delicious, too. Thanks for the tips on working with a tube pan. I find it difficult, but I've never used one with a removable bottom.
